Bruschetta (Toasted Bread with Toppings)
Tuscan bruschetta are toasted bread with a savory topping, usually served as an appetizer. The most common bruschetta is made with a simple fresh-tomato mixture as described here. Many versions exist; some add leafy greens, prosciutto, white beans, or even figs. Recipe Serving: Serves 8–10

Ingredients
- 1 loaf Italian bread, sliced 1/2-inch (1 1/4 cm) thick
- 4 cloves garlic, halved
- 1/3 cup (80 ml) olive oil
- 5 tomatoes, peeled, seeded, chopped, and drained
- salt to taste
- Pepper to taste
Directions
- Season tomatoes with salt and pepper to taste. Set aside.
- Toast bread on both sides until crisp.
- Rub 1 side of each slice with 1/2 a garlic clove.
- Brush each toast with olive oil.
- Spread a spoonful of tomato on top of each toast.
- Serve immediately.
